Chatamari is a traditional food among Newar people. It is also a popular food among Nepalese communities. It looks like a rice crepe or pizza. Chatamari is also widely known as Newa

pizza. It is a round bread made of rice flour with toppings of minced meat like buffalo or chicken along with onions, coriander leaves and eggs. It can be prepared as a plain crepe with the topping of sugar or made with a combination of different vegetables for vegetarian and vegan. So, Chatamari can be a great dish for vegetarian and vegan.While preparing a dish for a patient we should give attention about disease condition of the patient so we can prepare simple egg Chatamari also which are suitable for CKD, Diabetic and Patient with having gluten free diet.

Nepali Egg Chatamari is gluten-free and can be enjoyed as lunch, brunch, or as an appetizer.
This recipe is very delicious, extremely simple, and easy to cook. It can be enjoyed by vegetarians, non-vegetarians, and anyone following a gluten-free lifestyle. According to Nanishova Shakya (President of Nepal Dietician Association) gluten-free diet can be helpful for those suffering celiac disease or gluten sensitivity, eating more of these products may increase consumption of sodium, which can further progress renal function loss or contribute to difficulty controlling fluids for dialysis patients. If patient is CKD we can make egg Chatamari otherwise, feel free to add meat or other toppings as desired for normal health condition clients. According to Rashmi Bajimaya ( Upadakshya Of Nepal Dietician Association) In CKD we must be conscious of nutritive value of potassium,sodium and phosphorous which are contain minimum amount in this type of Chatamari.

Nepali Egg Chatamari is made with simply rice flour and water for the base. Just make sure the rice flour you are using is finely milled.
Key points to be noted:
The batter should be thinner than pancakes consistency. I used about 1 c flour:1 egg: 1.c water but feel free to add more water if your batter thickens up after letting it rest for a while.
Use a 6-8 ” nonstick pan and liberally grease the pan.
Close the lid and allow it to cook on low heat.

Ingredients
1 cup rice flour (50gm)
1-1.5 cup water (start with 1 cup and add more as needed)
1 tablespoon oil
1 eggs
Milk 100ml
salt to taste

Instructions
Mix rice, flour, water and egg together or can put on the Chatamari seperatly.
Add salt and jeera masala according to the taste.
Let it rest for 10-15 minutes.
Heat a 8″ well greased non-stick pan over low heat.
Mix the batter well and add water only if needed.
Pour about 1/2 cup batter (or little more depending on the size of your pan) so that it covers the pan well.
Cook on low heat for 3 minutes or so. Make sure the egg Chatamari is cooked to your desired consistency.
Boiled milk and put in a cup for serve.
